Biscotti di Prato alle Mandorle (Prato amandelkoekjes)

    450 caloriën per portie


    Ingrediënten:
    400 gr bloem
    250 gr suiker
    250 gr gepelde amandelen
    3 eieren
    het eigeel van 3 eieren
    1 zakje gist
    snufje zout

    1. Roer 2 eieren, het eigeel en de suiker door elkaar en voeg dan de bloem, gist en zout toe. Rooster voorzichtig de gepelde amandelen en laat ze afkoelen. Voeg ze dan toe aan het deeg.
    2. Vorm 3 worstjes van het deeg (3 vingerbreedtes breed en 1 vingerbreedte hoog). Leg ze op een ingevette en bebloemde bakplaat, met voldoende ruimte tussen elk worstje. Klop 1 ei en strijk wat ei over de worstjes. Kook ze vervolgens in de oven (± 15 minuten).
    3. Haal ze uit de oven en snij elk 'worstje' zijdelings met een mes in. Zet ze nog 10 minuten terug in de oven totdat ze knapperig zijn.
    4. Deze koekjes smaken het beste met een goede fles Toscaanse Vin Santo-wijn.
