    Bereidingstijd: 75 minuten
    800 caloriën per portie

    Ingrediënten:
    300 gr bloem (type 00: doppio zero)
    30 gr biergist
    water
    zout
    olie om in te bakken

    1. Bestrooi het werkoppervlak met bloem. 
    2. Los de gist op in een half glas lauw water met wat zout. Voeg de bloem toe en zo nodig nog wat water. Het deeg moet vrij zacht zijn.
    3. Maak een bal van het deeg, plaats het in een schaal met wat bloem en bedek de schaal met een schone theedoek of huishoudfolie.
    4. Als het deeg twee keer zo groot is (duurt een uurtje) rolt u het met een deegroller uit tot het ongeveer ½ cm dik is.
    5. Snij het in reepjes en bak het in hete olie.
    6. Serveer de ficattole heet met wat zout erop. Serveertip: heerlijk met vleeswaren zoals Mortadella di Prato, ham, salami en Finocchiona-salami.

Since then he has produced more than 15,000 shows and concerts, many of them acting also as conductor as well as production manager and musical assistant. He has created 8 festivals, the most important of which is the Puccini e la sua Lucca International Festival. As a conductor, he started his activity in 1994, conducting both in Italy and abroad. He studied with many distinguished conductors, among them P.Maag and A.Kerschner. In December 2013 he has performed with the Lucca Philharmonic at the Vienna Musikverein, in the Golden Hall, and was the first Italian conductor leading a totally Italian ensemble to record a DVD in the Golden Hall, the most prestigious concert Hall in the world. He is one of the biographers of the great Austrian conductor Herbert Von Karajan, about whom he recently produced a new critical biography/ essay: Il Mal di Karajan.
